I made Red Velvet Cupcakes! They're edible presents for a bride. Hee. She used to tutor me. (:

Here is the recipe! I really, really think yoghurt is the secret ingredient to moist cupcakes.

Red Velvet Cupcakes:

2 1/4 cups plain flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup butter, softened

2 1/4 cups sugar

4 eggs

1 1/2 cups plain yoghurt

6 teaspoons red food colouring

4 teaspoons vanilla extract

The cream cheese frosting recipe is the same as the one for my recent coconut cupcakes. Enjoy!

I made cupcakes! Again!

These are moist chocolate mini cupcakes! I think the yoghurt is really the key to making them moist. Anyway, I used leftover cream cheese icing from the recent coconut cupcake recipe.

Moist, Chocolate-Yoghurt Cupcakes

3/4 cup all-purpose flour

3/4 cup sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

6 tablespoons cocoa powder

3 tablespoons butter

6 tablespoons yoghurt

2 eggs

1. Oven at 180 degree celcius.

2. Flour + Sugar + Baking Powder + Baking Soda + Salt.

3. Cocoa Powder + 3 Tablespoons Hot Water.

4. Add butter, yoghurt, eggs into 3.

5. Add flour mixture into wet mixture.

Enjoy!

Tie-dye Project!

The corner spiral. Use a fork! It's super duper handy.

The marbled or crumpled pattern. By far the easiest to do. Go crazy with the colour squirts!

Spiral pattern on the left, chevron pattern on the right. I made these for my parents! They're going on a trip to Sabah. Hopefully they'll wear these. (:

Pretty colours, no? I didn't want to use primary colours again. I used them the last time to mix up new colours.

Here's what you'll need:

1) The dyes

2) Dye Fixer

3) Salt

4) Hot Water

5) Rubber Bands

6) Basins

7) GLOVES!

Can't stress the last one enough. I ended up getting dye all over my feet and palms EVEN when I had gloves on. They're a pain to scrub off, believe me.

Ta-daaaaa.

I made Ina Garten's Coconut Cupcakes today! They're officially the first batch of cupcakes I've ever made. When you bite into them, there's a burst of coconut flavour and then the taste of velvety cream cheese frosting. The cupcakes are moist so that's a plus. Nobody likes dry cupcakes. Behold!

My favourite part of today? The frosting! I used plastic tips bought from Malaysia. Heh. I'm a cheapskate, I know. Well, at least they work fine.

I'm thinking of buying actual metal tips from Bake It Yourself soon. Oh yes, I work there. It's strange I haven't bought anything from there yet. There's a discount and everything. I'll make sure I'll get some tips and sprinkles!

Pretty cupcakes. I swear cupcakes are more for the eyes than the mouth. Too pretty to eat.

Here's the recipe:

Ina Garten's Coconut Cupcakes

Ingredients

3/4 pound (3 sticks) unsalted butter, room temperature
2 cups sugar
5 extra-large eggs at room temperature
1 1/2 teaspoons pure vanilla extract
1 1/2 teaspoons pure almond extract
3 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup buttermilk
14 ounces sweetened, shredded coconut

For the frosting:

1 pound cream cheese at room temperature
3/4 pound (3 sticks) unsalted butter, room temperature
1 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
1 1/2 pounds confectioners' sugar, sifted

Directions

Preheat the oven to 325 degrees F.

In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on high speed until light and fluffy, about 5 minutes. With the mixer on low speed, add the eggs, 1 at a time, scraping down the bowl after each addition. Add the vanilla and almond extracts and mix well.

In a separate bowl, sift together the flour, baking powder, baking soda, and salt. In 3 parts, alternately add the dry ingredients and the buttermilk to the batter, beginning and ending with the dry. Mix until just combined. Fold in 7 ounces of coconut.

Line a muffin pan with paper liners. Fill each liner to the top with batter. Bake for 25 to 35 minutes, until the tops are brown and a toothpick comes out clean. Allow to cool in the pan for 15 minutes. Remove to a baking rack and cool completely.

Meanwhile, make the frosting. In the bowl of an electric mixer fitted with the paddle attachment, on low speed, cream together the cream cheese, butter, and vanilla and almond extracts. Add the confectioners' sugar and mix until smooth.

Frost the cupcakes and sprinkle with the remaining coconut.

So I've been spending a lot of time watching Buffy The Vampire Slayer. I'm talking late nights of Buffy on my laptop. It reminds me so much of Charmed in all the supernatural ways. Love it!

That's the only interesting thing in my life right now. Being alone would suck more if not for BTVS. At least I have something to kill time with instead of just sitting around doing nothing. I wanna go out but making plans are tough. My friends are busy when I'm not. Then I'm busy when they're not. That's the problem when your friends go to different schools. I miss them so much.

So...

At the end of this year, I'm heading to Perth for the Southbound festival with my sister and her friend. We're going to see Arctic Monkeys! Aaaahhhhh!

I'm so, so, so, excited. The festival is a two-day thing so we'll actually be camping there! Oh man, now that is something to cross off my bucket list. See Arctic Monkeys, camp out for a summer festival. But it's the first time I'll travel to a 'white-people country'. I wonder how their lifestyles differ from ours. Their culture and their food. I'm really excited about the food part to be honest. I mean, they don't eat rice there, right? Daily? Well it sounds like I'm going to Europe or something but Perth is just a 6-hour plane ride away. Haha. It's just my uncontrollable excitement! I don't usually take chances like this. I've missed a Vampire Weekend concert for exams I didn't even do well for. The concert was only 2 hours. Now it looks like they won't be back here for a long time. And I missed the 2011 Laneway Festival for no apparent reason. Whyyyyy. I missed Foals. );

So with Perth, I hope to be more spontaneous. Seizing every opportunity to get cultured, to travel and to see the world. Provided that I have money. I saved like hell for Perth. No shopping sprees for 3 whole months. A little proud of that I have to say. But I'm going to continue saving up for travel. Or to catch concerts! Foster the People is coming this January. I wanna go! I wanna go for Laneway '12 as well! So many dreams, so little money. Damn.

I figured that if I start blogging again, the deterioration of my English would stop. I tell you, I've been misspelling words and speaking Singlish too much now. It's really sad. I used to have a really good command of English. It was in all of my school testimonials. Haha. I was very proud of myself for that. Since I'm pretty sure no one reads this anymore, I'm gonna be more honest.. More personal, if you will. Previously, every time I post something I can't help but think about what others will think when they read it. So, the stuff I write is guarded and not intimate. A blog is an online diary. And you'd want that diary to be private. Yet, there's a little part of you that wants readers. Readers that inevitably judge you. It's strange. If there weren't readers, you'll just be writing to yourself about yourself. Anyway, no secret is really safe on a blog, though, is it? For one thing, I'm too uncomfortable revealing secrets to the world wide web. Anyone can read it. It will make me feel vulnerable. So a tangible, written diary is still best. I can just hide and chuck it away. Provided there's an adorable lock and key that comes with it. I do have one. Had one since I was about 10 or 11. Glittery, pink, with teddy bears all around. Oh, and fragrant papers. They still smell good to this day. In that diary, I have poured out my heart. My adolescent heart, full of childish antics and puppy love.

Constantly, I find myself without friends. It's not a good feeling. It makes you question yourself. It makes you wonder if there's something wrong. If I'm difficult to be with. If I'm super boring. Oh god, not boring. I'm not a repulsive person, right? I miss the closeness. I miss my secondary school days. We would spend our recesses talking about everything. It starts in a theatre, a night of encounters.

During the autograph session, he seemed shy. Oh, Sam. But I got to look into his pretty blue eyes.

They played a new song called 'This Is Moon'. I fell in love. Immediately.

He sounds amazing live.

Managed to snap a picture with only one of them but it's more than I hoped for.

There was an autograph session that we didn't even know about. We got lucky! The queue was super long but we managed to sneak into the front of the line. They signed my ticket and I gave each of them a hug. Aww. Oh, oh! I also touched each of their hands when they walked by. I think it's worth mentioning. Haha.

Please excuse me for being dramatic but believe me when I say, I almost got my dreams dashed. My fucking expensive dreams. My life - thrown off its tracks. So I nearly rejected Lasalle's offer. That is until my dear mother came to the rescue. Suffice it to say that she saved my future. Money ruins people's lives you guys. It's a life-ruiner. So now, I owe her. I feel the weight on my shoulders again. This time it's heavier. Much heavier.

I painted again! Though I really just feel like I'm drawing with a super thin paintbrush instead of a pen. I still haven't tried painting landscapes or flowers in a vase. I'm not that good yet. But hopefully I will be someday.

I was working at Borders the other day and saw some books on knitting. It would be really cool if you know how to knit. You have a ball of yarn, two sticks and then after some knitting magic, a multicoloured sweater. So cool! I would really love to learn. But I just say these things. I haven't gotten around to doing most of what I say I would.

The night was AWESOME. I haven't danced like that since SingFest. Singing along to their songs was euphoric. You get this rush. Feels good you guys.

As you can probably tell from the photos, Jon moved around ALOT. He was dancing all over the place. It's great cuz he has sweet dance moves. The man's crazy! Most of us thought he looked high. Maybe he was. Even if he was, he made the crowd energetic. One time, the crowd sang 'Down By The Water' to get the band back onstage after they left. We were all singing. It was so spontaneous and sweet. The band did come back to sing Skippin' Town and Down By The Water.

So I haven't seen my friend Aisyah in 5 months but yesterday she asked me out to eat and catch up. I was so glad she remembered me. I baked her chocolate chip cookies! She bought me a Bavarian Dunkin' donut in return. Haha. She's actually one of the few people I can talk to without having my guard up. But today, it was amazing how we can talk as if we weren't apart at all. Now that's something.

I'm in love with Swensen's Beef Sourdough 49ers. I can't believe I never thought of ordering it ever. Aisyah ordered them but I practically ate all of it. Slices of beef, caramelized onions, Swiss cheese and the best part? No veggies in the sandwich. So good you guys. I want more.

I really need to get my own handphone charger. I lost mine and now I wait til' the last minute to charge my phone. I hope I don't offend anyone for late replies. Phone problem aside, on to stuff that happened during my driving lessons.

Before any lesson we have to look at the tv monitor for our names and the cars we're assigned to. So you look and look and then you see a couple of familiar names pop up. They could've been strangers with just names I am familiar with but they all turned out to be people I recognise. I've seen 3 familiar faces so far. 2 of them were my Primary 6 classmates. I haven't spoken to them in ages. Well, I haven't spoken to them at all actually. Hence it'd be weird to walk up to them, say

My sister has already put Momo up for adoption on the Cat Welfare Society. His name is Momo now. Ozzy has started chasing him around the house. They're playing, hopefully. Lulu is still reluctant to accept him. I hope she isn't too stressed. I don't want any of them to die or anything.

My driving lesson today was crap. A week of no driving and I almost forgot everything. Yeesh. I had problems with gear shifting while slowing down. I hate the stupid gear. It's only because my coordination is shit and there is a lag in my reaction. I need practice!

Remember when I said I kept hearing meows coming from the opposite block? My sister and I went down and found this kitty. It was meowing all over the place. Poor thing. We brought it up to feed and clean it.This one is playful and super active. And he didn't even think twice about playing with Ozzy and Lulu's toys. Haha. Those two are like "Bitch, get out!". In other words, there were growls and hisses. It wasn't pretty. Now Ozzy and Lulu are confined to my room and Zazzle is in a box in the living room. Zazzle shall be his temporary name. I initially wanted to name him Moo. Pretty clear why, isn't it? Anyway, we're putting him up for adoption on Cat Welfare Society. My parents would be super pissed if we were to keep this one. My mom's a neat freak. Plus, two cats are already a handful.Isn't he cute?

It's pouring now. Can you imagine if we just left him there? We saved him.

My throat feels much, much better! Thank you god for antibiotics. I know my recent posts have been littered with complaints about my bad throat. It's the most interesting albeit painful thing that has happened recently. And now finally, it's coming to a close. I know I should probably get a job but I'm plagued with laziness and I don't think I'll get a kick out of it. Freedom is as good as it gets. I heard Uniqlo at Causeway Point is hiring. It didn't entice me enough to go for the interviews though. If I finally decide to get a part-time job, you'll be the first to know. In the meantime, I've got five consecutive days of driving lessons to attend.

Since my cherry red 1461s are currently out of stock, I'm thinking of getting these instead. I don't even know if they're available. Hmm.

Waiting for those letters to reach my mailbox. Hopefully there is at least one acceptance letter within the rejection letters. Scared senseless. I've also booked my next five practical driving lessons. Hopefully they will all go smoothly. I can't wait to drive the family car. Heh.

My throat isn't getting better. I've been popping Strepsils all day. The extra strong, numbing ones. At least it isn't tonsilitis. I saw pictures. They were gruesome. I remembered having ulcers at the swallowing part of my throat years ago. They hurt like hell. I had to go to the hospital for some antibiotics. Brutal, you guys. I see no ulcers on this one though. Thank god.

I've started driving on the roads for my lessons!!! It was nerve-wrecking at first but I think I can drive pretty smoothly if I say so myself. I only had four lessons so far and I drove with a fever for two. Not bad, eh?

Sims 3 have been taking up most of my time lately. But it's fun and I love it. Heck, I'm even playing it right now as I type this.

So far, I've killed a Sim and married two. And my crib's pimpin' you guys. There's a pool and everythin'. I was tempted to use cheats but I guess that kills the unpredictability and fun so I didn't.

Gonna get my doc marts soon. Yay. There. MLIA.

I am STILL reluctant to work. I've got a serious case of the lazies. At least I get to spend most of my time with my family. (:

Went out with my homegirl Nad today for a hippie-themed photoshoot. I'm ashamed to say I looked nothing like a hippie. But Nad really pulled it off with her outfit! She's an aspiring model, you guys. Hence, the beautiful photos.

The weather was so bloody hot. We sweated buckets. After the photoshoot, we retreated to a mall to watch Sucker Punch. Wasn't awesome but it wasn't terrible either. I enjoyed it I guess. The antagonist was an ultimate jackass. I don't know. The movie just stirred something feminist within me. It's 4am. I think I should turn in. Sending my dear brother to the airport in the morning. He's heading to Shanghai for six days. I'll miss him. ):

Grabbed some froyo with my sister yesterday. We spent 12 bucks on froyo, you guys. Which makes our visits to Spiral Art a trimonthly affair. We had peach, green apple, strawberry and natural froyo topped with cocoa crispies, granola, peaches, longans and barely a spoonful of fruity pebbles. Yummy. Before froyo time, we went to survey my 1461 cherry red doc marts. I looked gooood in those shoes. They're like happy shoes. Once I stepped in them, I felt joy and glee. Heh. Unfortunately, I still haven't got enough to purchase them. Gotta save up more. Oh well, just two more weeks! (:

Met up with my girls yesterday. I haven't seen them in ages! Both were super busy with their poly life. So we went to Marché for lunch and then Henderson Waves to chill. The food at Marché was disappointing for me. The paella was bland though there was a generous load of seafood in it. I had to sprinkle in salt, you guys. Plus, there was this really rude server at the drinks section of the market. Pssh. I'd probably go to 313's Marché instead of this one in the future. Just to try their rosti and crepes.

Then at sundown, we headed to Henderson Waves. I had to climb a bajillion steps in the doc marts and I nearly died. Jeannie had to climb up in her wedges. Poor girl. We eventually found a spot and played Monopoly Deal with Adele playing in the background. Thank god my sister was around to pick us up. The journey home could've been murder.

Busy with admissions, driving lessons, managing my ebay, springcleaning and most of all, Tumblr. You could spend hours on Tumblr and it will seem like minutes. I love Tumblr.

I've gotten rid of my A-level stuff. I guess I'm never going back now. Time to move forward. It feels good. I've applied to the big three local unis. All I need to do now is draw 2 more designs for ADM, put my portfolio into a CD, photocopy supporting documents and buy stamps for postage. I also need to mail two packages to my buyers and take a Final Theory Test tmr which I honestly haven't studied for.

So little time, .....you know the rest.

My results are mediocre. That's all I have to say about it. One crying session is enough. There's nothing to do now but move on.

I'm busying myself my applications. Hopefully, I'll be able to get into NTU's Art, Design and Media. I need this. That or NTU's Sociology. But ADM seems right for me. Finally, I'm pursuing something I love. I want to learn filmmaking too.

I think I'm crazy about Maltesers. It might be my favourite chocolate at the moment. But it's dangerous. I'm poppin' them into my mouth so quickly I could OD on sugar. Like pills I tell you.

Anyhoo, I am now updating and reinventing my iTunes. My hard drive stored a big part of my life before it bit the dust. All my pictures, music and videos that I cherished.. they're gone. Nothing is left of that hard drive. I was sad but I guess I should move on and trying gathering files online. Rebuild my data.

My life could change this Friday. I can't stop thinking about it. I try to make myself stop thinking about it though. It's hard.

What's a beach vacation without swimming, eh? We did a lot of snorkeling in Phi Phi. I barely snorkelled in Krabi though. The water had really poor visibility. I couldn't see shit. And I didn't dare swim if I can't see what I'm swimming in. There could be jellyfish or sea urchins for goodness sake. So that was disappointing and super bad. In fact, I was really cranky in Krabi. I hope I didn't give my parents a hard time. It's just that we wasted a day going on that stupid snorkelling tour. And the shops in Krabi sold similar items so walking from store to store was boring. Plus, I couldn't shop. Yikes. And then there was the food. I don't know if we just chose wrong restaurants to eat in but the food wasn't good. My mum and I even had diarrhoea after eating from one of them. I was popping charcoal pills the next day.

But all was made up for in Phi Phi. The water was crystal clear, I swam with colourful fishes and I snapped a lot of pictures with my new underwater camera! The film is getting developed. I can't wait! The food there was awesome. Really good, cheap, authentic Thai food. We had a seafood feast on the second last day. And then I had the best coconut ice-cream sundae. So. Good. I got to shop too!

There's nothing like discovering a song you really like on tv. It makes me all happy inside. I heard this amazing song playing during a bank commercial. Of all things. It takes me away whenever I close my eyes to listen to it.

I know it's weird that I haven't mentioned the title. I just have this reluctance of sharing certain special songs on my iPod. It's like telling something secret or personal.

I'm leaving for Krabi tomorrow! For five days. I'm excited but a little nervous for the plane ride. Hopefully I can distract myself from the somersaults in my stomach everytime the plane dips a little. Maybe I'll watch two episodes of Community and chew on some gummies. Only my mum and dad are coming with me. My siblings are rumoured to be having a pizza partay at the house while we're gone. I'm gonna miss the cats. It's raining outside right now. And they're all snuggled up under the bed. Seems to be all they do these days, rain or shine.

I've finished reading all three books of The Hunger Games trilogy. I didn't want it to end. And now, I am lost. I hate it when a really good book comes to an end. I hate it when any last book of a great series ends. Now I'm only left with wondering if the movie will be a good one.

I've finished reading Never Let Me Go and just now, The Hunger Games. Honestly, Never Let Me Go was really slow. And it wasn't a page-turner. Reading it only made me want to watch the movie. Even so, I've downloaded the movie but I haven't seen it. Maybe because it's not a genré I particularly like. I like adventure and action and romance. Books I loved reading usually had at least one of these, if not all.

So it's no surprise to me when I got hooked on The Hunger Games. No doubt it was a page-turner. I only took 2 days to finish it. And now I want more! I'm gonna buy the other two as soon as possible. It's safe to say that I'm obsessed with the series. And it kills me that I can't properly picture Katniss, Peeta or Gale. I hear they're making a Hunger Games movie. They better not ruin it. Yeesh.

I love reading books that take me away into their world.

I dreamt about him again.

Two nights ago. Nothing indecent. It was more like a memory. We were just walking around and conversing like old friends. Catching up I think. I didn't know him well in reality. I wish I did. He was an interesting character. Always making me and everyone around him laugh. That was what I liked about him. Still, we are practically strangers. Him and I. I haven't seen or heard from him in ages. But I have spoken to him before; however brief our conversations were. When I was dreaming, I knew it was lucid and I remember pinching myself while walking next to him. I felt the pinch. I wonder if I pinched my arm when I was asleep. A part of me didn't want it to be a dream. Strange. I feel like I'm harbouring feelings for a boy I hardly know. Like a crazy person. All I want to know is why and what it means.

I bought 2 tubs of Ben & Jerry's yesterday and today one tub's finished. Technically, it didn't even last a day. Chocolate Chip Cookie Dough is the sex! It costed me 20 bucks but I guess I didn't mind paying. They were heaven's ice-cream.

You know that list I made two posts ago? Haven't checked anything off from it yet. But I'm gonna make sure I do get them done.

I went to sit for my Basic Theory Test today. And passed! Yay. Then I was told that I could get my PDL to start practical lessons. I haven't registered for one yet but I will. I CAN'T WAIT.

So a couple of days ago, I was watching the Community episode where they all had chicken fingers after Abed became the mafia king and bought Troy a monkey named Annie's Boobs. Anyhoo, I had a sudden but understandable craving for chicken fingers ever since. I just made some and they turned out yummy! Found the recipe online. (:

I'm just really glad they turned out well. Little things like this can make one so happy. My mum told me to 'learn to be independent' today. So this morning I cabbed to SSDC on my own. And then I went to the bank to get a GO card so I can shop online and sell stuff on Ebay. On my own. I went to get my eyebrows done on my own. I went grocery shopping on my own.

HARRY POTTER ROCKS WHEN HE'S HIGH. AND I LOVE RON WEASLEY! OH. SO. MUCH.

The movie was awesome. Definitely an upgrade from the previous one. But to each his own.
Ate a smuggled Bandito Pockett in the cinema. Laughed my butt off. Walked around before heading home. Saw a familiar face. Took pictures. Went home. Tired now.
I ran 7 rounds around the track this morning. And I'm proud of it therefore it's mentioned. I also decided to start writing in a journal. Haaaaa.

Transformers: Revenge of the Fallen was awesome! There were too many explosions though. Overkill. An entertaining movie nonetheless. Agent Simmons and Leo were funny as hell.

In other news, Michael Jackson is dead. I can't believe it. The guy was amazing. Even my granny loves him. I love his dancemoves the most. The moonwalk? Stellar. The world's gonna miss him.

Today was super awesome! I did two things for the first time ever. Bowling and pool. That's what the kids are doing nowadays. I think I prefer bowling though. Suffered several "longkangs" but it was fun nonetheless. And cheap too! Pool was new and technical. Frustrating also. But only when the ball doesn't go where you want it to. Screw it, I love them both.

We also ate at the Seoul Garden in Marina Square. Good food, but most of my cash is now gone. I handed over the 15 dollars, dying a little inside. That's it, no more ridiculously expensive meals for this sucker.
